I present to you one of our flagship dishes – the sizzling lamb! It has withstood the test of time remaining one of the signature dishes of Naturally Chinese. It possesses the essence of medicinal ginger and fresh spring onions, two of our most used ingredients. This dish is popular throughout the year and in all seasons.
Like the Mandarin Steak talked about a couple of weeks ago, this dish was created in a similar style to enhance the flavour of the meat rather than overwhelm. In this case, the slivers of fragrant lamb are cooked in a simple garlic and ginger sauce, with the added subtlety of the green onion as compared to a stronger white or yellow. The onion also brings a light and refreshing taste to the entire dish. And the experience isn’t complete unless there is a good wine to complement.
Here’s our pairing suggestion: For a stronger palette, try the Rioja Crianza, el coto, which presents a bright ruby red and powerful tempranillo (which is of the black grape variety). It has traces of blackberries and plums mixed with some spice and hints of oak. For the milder, the Chaumiere Blanc — our house white that has a smooth, elegant body, or the Viognier-Semillon chardonnay “winifred” de grende – this is a beautiful wine from South Africa with tantalizing peach, pear and dry herbs. A fine dry finish with a honeyed aroma. One of my favourites!
