A smoky, chilli flavour is always in season, but is particularly popular as the weather transitions to a colder temperature. Our szechuan style chicken or king prawn dish is the perfect concoction of sichuan pepper with spring onions, red chillies and a delicious sauce to bring comfort as well as robust vitality to the heart.

Sichuan pepper is also known as Chinese coriander. Grown abundantly in the Sichuan region of China, its literal meaning is the flower pepper. The hull of the seed is often used for medicinal purposes. It is curious to note that it has hints of citrus that gives it a complex flavour like no other chilli pepper.

For the most part, Sichuan pepper is an exotic ingredient that has made its way into different regions of the world. To treat yourself to this red medicine is to provide healing to the body, flushing the toxins that settle in with cold winters. Try this dish with a full bodied wine, or in total contrast, some jasmine green tea and you will notice an immediate comfort to the body. Oh and not forgetting, it’s immensely delicious too!
